Pumpkin Pot Pie


From me to you... The delightful Pumpkin Pot Pie that made me eat more pie in one day than I ever should☺

Ingredients
The Crust
3 cups flour
Pinch of salt 
1 cup oil
9 tbs water

The Filling
5 cups pumpkin (boiled and mashed)
4 tbs scallion (chopped)
4 tbs garlic (chopped)
1 tsp pepper (chopped)
4 tbs thyme leaves
Salt to taste

Method
The Crust: In a bowl, add flour and salt, and combine properly. Mix water and oil in a separate container. Then sparingly add the liquid mixture to the dry ingredients. Mix and clump together to form dough. Roll the dough between two pieces of grease paper with rolling pin. Then cut dough in a large circle.

The Filling: In a pot on low heat, saute scallion, thyme leaves, garlic and pepper.  Then add the mashed pumpkin in the pot, sprinkle salt, and combine properly. Turn off heat and cover the pumpkin mixture in pot with dough. Leave at least 2 inches of dough for sealing edges. Make sure to cover pot edges by crimping or tucking the edges of dough properly. Then bake at 350 degrees Fahrenheit for 30- 45 minutes, or until crust is golden brown.
