Happy Wednesday! Well... This was my lunch yesterday! Yummy Battered Fried Pumpkin.
It takes just a few minutes to make and I know you will love it too...
1 1b pumpkin (peeled and cut into 1/2 inch wedges/squares)
2 cups all purpose flour
1/4 tsp cayenne pepper
1 tsp scallion (finely chopped)
1 tsp thyme (finely chopped)
Pinch of salt
1/2 cup water
Oil for frying
In a bowl, combine all dry ingredients (excepting pumpkin). Gradually add water and incorporate properly. Batter must be very thick. Dip slices of pumpkin into the batter and make sure each piece is properly covered with batter. Then shallow fry on medium heat until golden brown ♥
